What you’ll need
- 1 whole butternut squash (or pre-cubed butternut squash if you want to save some extra time)
- Chicken thighs
- 2 Tablespoons Butter
- Garlic Powder
- Onion Powder
- Onion Flakes
- Cinnamon
- Nutmeg
- Cumin
- Salt
- Pepper
Step-by-step
1. Cut Butternut Squash
If you’re starting with a whole butternut squash, cut off the two ends. If it is too hard to cut with a knife, use a fork to poke holes all around the squash, and then microwave it for around three minutes or until it becomes more tender.

2. Peel Butternut Squash
Next peel the butternut squash and cut it in half, placing it on the counter horizontally.

3. Scoop Butternut Squash
Scoop out all of the seeds in the middle of the bottom half.

4. Cube Butternut Squash
Then cut the butternut squash into cubes. We cubed the entire squash, and froze the top portion. The store we shopped at didn’t have the right size, so we had to settle for a larger one. If you run into the same situation, there is no need to worry. Just save the rest for your next butternut squash recipe!
5. Melt & Add Butter
Now melt the butter and toss the diced butternut into it. You can also use olive oil or vegetable oil if you prefer.

6. Add Seasonings
Add all of the seasonings except the cumin and toss the squash into it.

We didn’t measure the seasonings but put at least a couple of teaspoons or more of each seasoning except the nutmeg. Since the nutmeg can be very strong in taste, we recommend putting less of it in than the rest of the seasonings.
7. Prepare Chicken
Once finished with the previous step, add the chicken to your pan. We used a 9×13. If you are making a larger amount you may need to use a sheet pan.

8. Season Chicken
Sprinkle all of the seasonings on the chicken, including the cumin. We personally would go a little heavier with the cumin, but that’s more of our preference than a necessity.
9. Combine Squash & Chicken
Place the butternut squash around the chicken.

10. Bake
Once everything is set, place it in the oven preheated at 350*F. Let it bake until the chicken is at least 165*F and the butternut squash is soft. You should be able to put a fork through the cubes without difficulty. We love to serve this dish with a little bit of brown sugar sprinkled on the butternut squash. It tastes fantastic!
